For instance, there’s a banana flower ragout that’s based on a dish I once had in Kerala.” Family recipes have a special place in our hearts and chef Rahul plays on this sentiment by bringing flavours from his ménage. “My father’s family is from a village in Sawantwadi, just north of Goa. And the kind of cooking they do is similar to the Gaud Saraswat Brahmin cooking common to Goan households. So, my Ajji’s kairi curry is based on something my grandmother would make. But I am pairing it here with a pan-seared grouper.” With the menu changing on a day-to-day basis relying on the fresh, local ingredients that can be found each day, the experience is one which is truly in tune with nature.
