Sevilla is a charming, casual dining restaurant, which under Chef Sahil Sablok is constantly innovating Mediterranean cuisine. While the Chef, creates excellent Spanish classics like Gazpacho and seafood Paella, his culinary philosophy focuses on “food miles”. This genuinely simple concept aims to deliver fresh produce straight from the source. Be it fresh greens or succulent meats, the restaurant offers fantastic seasonal options along with its core menu. Start the meal with a plate of freshly compressed watermelon with goat cheese and tomato water. Compliment it with some succulent bacon wrapped dates or the patata bravas – a plate of golden fried russet potato topped with spicy red pepper sauce and parsley aioli. Another favourite is the black linguini with seafood – this timeless coastal recipe with squid ink, shrimp and scallops is a must try. The gambas del chorizo is another unpretentious, honest to goodness recipe with a homely flair. There are great options for vegetarians, try the elegant truffle doused asparagus and artichokes with hazelnuts or the creamy beetroot risotto with Gorgonzola and pears. Save your appetite for the braised lamb shanks with risotto milanise and flavored gremolata. The perfectly cooked lamb is a treat and a testament to the fine cooking at Sevilla. Lap it all up with a plate of crispy churros with chocolate sauce and ice cream or a sticky date pudding. Sevilla is great experience – don’t miss it!
