Spinach uttapam
The memo: Uttapam but make it even healthier. Top up your usual uttapam with protein-rich paneer and some blanched spinach. This green leafy vegetable is packed with vitamins A, C and K and has antioxidants that fight free radical damage. Kajal recommends amping up the flavours by pairing it with coconut and mint and coriander chutney.

Carrot cake
Combat midday cravings with a paleo and gluten- and sugar-free carrot cake. Not only will this tea time snack crush your hankering for sugar (carrots are very high in natural sugar) but will also deliver nutrients like manganese (lowers cholesterol), magnesium and calcium (great for bone health). She has listed out the exact recipe in her post but if you’re looking to bake an eggless cake, we recommend substituting each egg with one tablespoon of flax seeds and three tablespoons of water.
