A popular favourite bowl though, is the chia seed and fig pudding; here’s how to whip it at home, as you miss the sprawling Vana property.
Chia Seed And Fig Pudding With Berries
Occasion: Breakfast, snack or dessert
Preparation time: 2-3 hrs
Serves: 4
Ingredients
4 tbsp chia seeds
1 1⁄2 cups almond milk
10 figs
1 tbsp honey
A pinch of vanilla bean powder
To Garnish
A shredded slice of coconut
Fresh berries
Edible flowers
Method
Soak figs in regular water for 2 hours to rehydrate them. Slice 4 figs and make a puree of the remaining 6 ones. In a mixing bowl, add chia seeds, almond milk, honey and the pureed figs. Mix properly. Set aside this mixture for 10-15 minutes. Now, in a serving bowl, arrange the sliced figs in a decorative manner, and pour the mixture over it. Allow it to set for 15-20 minutes in the refrigerator. Once chilled, garnish the bowl by topping it with berries, the coconut slice and edible flowers. And voilà, your nutritious pudding is ready to be devoured!
