2. Project Hum (Pali Hill, Bandra)
When Raghav Simha, Pragun Bajaj and Jatin Talreja were invited to MAD in Copenhagen where they understood the importance of the farm-to-fork movement around the world, they decided to bring this concept to India too. Say hello to Project Hum, the new restaurant that brings clean, organic, healthy, and delicious meals to the table whilst calling for greater conversations around sustainability, nutrition and local food systems. The menus are seasonal and showcase each farmer. There’s also a QR code through which you can track each ingredient. The environment-conscious team uses 100% biodegradable sugarcane bagasse crockery which saves 40% water. Coming to the food, the menu has a blend of global flavours with local ingredients. Expect dishes like buckwheat noodles served with Karnataka’s Byadgi peanut dressing, bajra-chilly and proso tabbouleh made with variations of millets sourced from tribal communities across western India, togarashi-grilled fish made with the fish of the month and locally-inspired dressings like curry-leaf and solkadi vinaigrette. So when you choose to eat at Project Hum, you indirectly contribute to an alternative food system.
