The work of Fabergé’s first female designer, Alma Theresia Pihl, the sophisticated & iconic Mosaic Egg pendant from Fabergé’s Imperial Easter Eggs collection of 1914 is now edible! Courtesy of culinary genius John Williams, the dish features a soft-boiled quail’s egg encased in a lobster mousseline, bejewelled with vegetable gems (to represent the colours and quilting of the ruby, and fire opals gemstones from the Fabergé Treillage egg pendant), which are then served on a bed of Oscietra caviar, and finished with a langoustine à la nage sauce. Tempting right?
These one-of-a-kind eggs will be available for guests reserving the three-course Fabergé menu in the Michelin-starred Ritz Restaurant during Easter Week. The menu also includes delectable wine at £295 AI per person.
