Araku Restaurant, Colaba
Aditi Dugar’s Benagluru-based Araku comes to Mumbai in the form of a flagship restaurant. Spread across 2,800 sq. ft on two levels, the 55-seater serves freshly brewed Araku coffee along with many other beverages, cocktails and dishes that tie in with the philosophy of Regenerative Agriculture. Chef Rahul Sharma makes use of little to no exotic ingredients, yet the dishes are packed with flavours. ARAKU makes everything from tofu to cream cheese in-house–It takes the form of Tofu & Squid Crackers on the menu. Championing a zero-waste philosophy, the Shrimp Toast is another interesting dish where the mayo sauce is made from prawn shells.
