And as much as we love gorging on it as is, it undoubtedly tastes smashing when infused in a drink, added to a savoury dish and of course, made into a dessert. Mango Menus
1. Nara Thai (BKC, Mumbai)
Sure, mango tastes yummy in sweet dishes, but have you ever tried it when it’s part of a full-fledged savoury meal, that too in Thai flavours? Nara Thai gives you this experience. Love experimenting? Then you’ll enjoy Bhola & Blonde’s unusual mango dishes, which have certainly caught our attention. Relish their appetisers such as Dahi Mango Kebab, Chili Mango Fish, Achari Aam Aloo or Mango Glazed Honey Chicken. Head into the main course with Raw Mango Curry, Khatta Aam Ki Dal, or Meen Mango Kuzhambu. Embrace Toast & Tonic’s seasonal menu packed with vibrant colours and punchy flavours this season. Some of the offerings include a mango infused gin and a summer salad featuring the fruit, but our eyes are on that Alphonso Mango Panna Cotta with a local passionfruit broth–it tastes as good as it looks!

Mango Recipe
Whether you’re a budding baker or simply enthusiastic about the art, here’s a mango tart recipe from Chef Avin Thaliath, Co-Founder and Director of Lavonne Academy of Baking Science and Pastry Arts, which you can make at home.Â
Element 1: Coconut Namelaka
Coconut Puree: 270gms
Invert Sugar: 16gms
Gelatine: 13gms
White Chocolate: 400gms
Whipping Cream: 540gms
Vanilla Pods: 02 pods
Soaked Chia Seeds: 15gms
Method:
1. Soak the gelatine in ice water until softened, squeeze out excess water and set aside.
2. Boil the milk, scrape vanilla bean and invert sugar in a saucepan and dissolve the gelatin.
3. Melt the white chocolate at 40 degrees Celcius.
4. Strain the liquid over the chocolate in three parts and stir vigorously to emulsify.
5. Add the cold cream. Stir again making sure not to incorporate air bubbles.
6. Let the mixture crystallize in a covered container, surface wrap in the chiller for at least 6 hours.
Element 2: Mango Confit
1 cup + 1/3 cup (220 g) Mango (fresh)
1/2 cup (125 g) Mango Purée
1 tbsp + 2 tsp (25 g)Â Water
1/3 cup + 1/2 tsp (75g) Sugar
1 1/2 tsp (4g) Pectin
1/3 tsp (2g) Sea Salt
2 tsp (10g) Lemon Juice
Zest of 2 Lemons
Method: Cut the fresh mango down into small 0.5 cm cubes then combine it with water, and pineapple juice in a heavy-bottomed pan. Using fresh pineapple juice would be perfect. Heat to 40 degrees Celsius, then add in a combination of sugar and pectin. Continue to cook on medium heat until the mixture reaches a steady boil. Once it thickens, add the lemon juice and allow the confit to cool. Finally, season it with some lemon zest and sea salt to round out the flavour.
Vanilla Sable Dough:
Butter: 360gms
Confectioners’ Sugar: 195gms
Pinch of Salt
Almond Flour: 90gms
Whole Eggs: 142 gms
Flour: 795gms
Preheat the oven to 160 degrees C or 325 degrees F
Method: In the bowl of a stand mixer fitted with a paddle attachment, cut the butter into small cubes and place in a bowl. Add the flour, cocoa powder, sugar, salt and almond flour and beat until the mixture resembles bread crumbs. Add the egg and bring the mix together until it forms a ball. Roll dough to 1/8 inch thickness between two parchment paper, cover it with plastic wrap and refrigerate for 20 min. Butter small tart moulds and cut dough to fit, line and trim its mould and freeze for at least 1 hour before baking for about at least 15 min until lightly golden.
